嚴選來自委內瑞拉北部、被高山雨林環繞包圍的Chuao莊園所生產的頂級可可豆製作而成。Chuao被喻為當今世上首屈一指的夢幻可可產地，地位等同於咖啡裡的「藍山」；不僅每年產量極為稀少有限，價格更是衿貴不菲，且從幾年前起，更由AMEDEI全數獨佔，成為全球巧克力界喧騰一時的大事，也使Chuao系列巧克力成為AMEDEI下的代表性名品。
製作上也格外耗時費心。除了須經過烘炒、研磨等多重程序外，為使巧克力的顆粒更加細緻滑腴，還必須連續調溫長達72小時，最後再放置20天使其充分熟成。如此繁複精細的製作過程，使Chuao巧克力得以完整釋放出芳醇濃郁的香氣，且帶有近似梅子、李子、或紅色漿果般優雅宜人的酸度。
